“It’s So Fabulous!” Design Favorites of the Week: This week, we have been learning about Staffordshire pieces, and although I have shared several pictures of my personal collection, I saved my 2 very favorite pieces for Fabulous Friday! Here are they are….

This piece is actually quite tiny... not more than a few inches high. I treasure him so much for a few reasons. First my husband purchased him for me as a very special gift, and I actually ended up using him as the sole inspiration for my son's first bedroom design! Second, this little guy is not just a figurine, but he is also a whistle! So FABULOUS!

The large figurine in the back of this grouping is one of my all-time favorites. He is just such a charming gentleman, isn't he?!

“It’s So Fabulous!” Gift Idea of the Week: I have been told a time (or one-hundred!) that I am a difficult person to buy gifts for!? However, I recently received an absolutely FABULOUS and CREATIVE gift from a dear friend that I am so excited to share with all of you.

At first glance, you might assume that this is simply a beautiful pillow. However, upon closer investigation, you may be able to tell that it was once a scarf that my sweet friend had made into a custom pillow sham! Isn't that a FABULOUS gift idea?

“It’s So Fabulous!” Inspiring Nature Photo of the Week: This photo is actually one that a friend shared with me after returning from a camping trip. I thought it was such a peaceful scene. And after all, who can’t use a little more serenity in their life, right? Exhale….

The reflection of light off of the water is so calming. I can almost hear the frogs croaking their songs.

“It’s So Fabulous!” Recipe of the Week: As many of you may already know, I am a bit of a health food addict, and as a result, my youngest daughter, Grayanna, has started eating healthy, as well. When we dine at the restaurant in our local health food store, she typically orders the all-natural peanut butter and jelly sandwich. Her love for this delicious lunch made me wonder if she would possibly enjoy this new recipe I found for PB&J Muffins…. Hmmmm…. Definitely worth a shot! PB&J MUFFINS

Makes 12

1 cup whole-wheat flour
1 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup nonhydrogenated creamy peanut butter
3/4 cup low-fat (1 percent) milk
1/2-3/4 cup honey
1/2 cup finely grated carrot
1/2 cup finely grated zucchini
2 eggs, beaten
1/4 cup canola oil
All-fruit strawberry or raspberry fruit preserves

1. Preheat oven to 400º. Spray paper muffin cups with nonstick cooking spray.

2. In a large bowl, combine flours, baking powder, baking soda, and salt. With two knives or a pastry blender, cut in peanut butter until coarse crumbs form and mixture is no longer powdery. Add milk, honey, carrot, zucchini, eggs, and oil; stir until well moistened.

3. Spoon about 2 tablespoons batter into each muffin cup. Top each with about 1 teaspoon fruit preserves. Cover with remaining batter. Bake 15–20 minutes, until toothpick inserted in center comes out clean.

PER SERVING (1 muffin): 304 cal, 40% fat cal, 14g fat, 2g sat fat, 36mg chol, 9g protein, 39g carb, 3g fiber, 283mg sodium
